Stuffed Peppers (Speca të Mbushur)
Ingredients:
- 6 large bell peppers
- 1 cup rice, cooked
- 200g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions:

Preheat the oven to 180°C (350°F).
2.
Cut the tops off the peppers and remove the
seeds.
3.
In a skillet, heat olive oil and sauté onions
until translucent.
4.
Add ground beef and cook until browned. Drain
excess fat.
5.
Stir in cooked rice, tomatoes, paprika, salt, and
pepper.
6.
Stuff the peppers with the mixture and place them
in a baking dish.
7.
Bake for 30-40 minutes until peppers are tender.
8.
Garnish with chopped parsley before serving.
Main Course
Stuffed Eggplants (Patëllxhane të Mbushur)
Ingredients:
- 4 eggplants
- 1 cup ground lamb or beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup rice, cooked
- 2 tablespoons olive oil
- 1 teaspoon dried mint
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions:

Preheat the oven to 200°C (400°F).
2.
Cut the eggplants in half lengthwise and scoop
out the flesh, leaving a shell.
3.
Chop the eggplant flesh and set aside.
4.
In a skillet, heat olive oil and sauté onions
until soft.
5.
Add ground meat and cook until browned. Drain
excess fat.
6.
Stir in chopped eggplant flesh, tomatoes, cooked
rice, dried mint, salt, and pepper.
7.
Fill the eggplant shells with the mixture.
8.
Bake for 40-45 minutes until eggplants are
tender.
9.
Garnish with fresh mint leaves before serving.
Dessert
Albanian Walnut Cake (Torta me Arra)
Ingredients:
- 1 cup walnuts, finely chopped
- 1 cup sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 cup milk
- 1/2 cup olive oil
- 4 eggs
- Zest of 1 lemon
- Powdered sugar for dusting
Instructions:

Preheat the oven to 180°C (350°F). Grease and
flour a cake pan.
2.
In a bowl, beat eggs and sugar until fluffy.
3.
Gradually add olive oil and milk while mixing.
4.
Fold in flour, baking powder, chopped walnuts,
and lemon zest.
5.
Pour the batter into the prepared pan.

Bake for 35-40 minutes until a toothpick inserted
into the center comes out clean.
7.
Let the cake cool in the pan for 10 minutes, then
transfer to a wire rack.
8.
Dust with powdered sugar before serving.
Salad
Albanian Shopska Salad
Ingredients:
- 2 cucumbers, diced
- 3 tomatoes, diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
